👉🏻 La formalización y la profesionalización de los negocios son uno de los aspectos centrales en los que trabaja Acodrés en la actualidad, buscando un salto de calidad.

La Asociación Colombiana de la Industria Gastronómica, Acodrés, desde su capítulo Bogotá Región, se constituye en el motor de una transformación profunda del sector, con un enfoque en la formalización profesionalización y sostenibilidad de los negocios y establecimientos que operan en la capital, como iniciativas clave para potenciar una industria que contribuye con un 3,9% del PIB y genera empleo para más de 400.000 personas en la capital del país

Liliana Montaño, Directora Ejecutiva de Acodrés Bogotá Región, subrayó la misión de la asociación para guiar a los empresarios hacia un panorama de crecimiento sostenible. “La industria enfrenta hoy dos grandes retos: la ausencia de conocimiento de muchos de quienes se lanzan a abrir restaurantes, un panorama que da lugar a la competencia desleal y al cierre de negocios, y una alta informalidad, en un 75 por ciento de los negocios gastronómicos de la ciudad”, dijo.

Estas cifras hacen urgente el enfoque asumido por el gremio, no solo para alentar la formalización de negocios, sino también para alentar el apoyo integral para la formación y la formalización del sector desde un portafolio de servicios que promueve las buenas prácticas, procesos adecuados, sostenibilidad de los negocios, información y acceso a proveedores de calidad, entre otros aspectos sustanciales para el crecimiento de la actividad.

Un sector que busca reinventarse

A partir de estos lineamientos, Acodrés Bogotá Región realiza un trabajo para sentar en la misma mesa a proveedores y empresarios, con el fin de apoyar a quienes apenas están ingresando en la industria, destacando la importancia de las misiones gastronómicas. “La invitación es clara: invitar a los emprendedores a formalizarse, a que conozcan cómo operar sus negocios, destacando la importancia de las misiones para el aprendizaje global, ofreciéndoles una formación que va más allá del establecimiento físico”, comentó Montaño, quien destacó que los grandes operadores del sector en todo el país se han inscrito en estos programas, mostrando a las claras que existe un interés real dentro del sector por seguir este camino.

La calidad en la operación, el diferencial colombiano

Según cifras entregadas por Acodrés, a nivel nacional, hay algo más de 107 mil establecimientos gastronómicos —el 80 por ciento de ellos concentrados en la ciudad de Bogotá—, que generan aproximadamente 550 mil empleos en el país, con un aporte significativo al PIB nacional, del 6,8%, que reportan algo más de 173 billones de pesos en ventas en el nivel local, a los que se suman unos 5,3 billones de pesos en ventas al exterior, en especial hacia los mercados de Estados Unidos, Francia o Canadá.

Un dato relevante es el de la composición de la industria, ya que el 95 por ciento de los establecimientos corresponde a microempresas, un 3,7 por ciento a pequeños operadores y el 1,3% restante se reparte entre medianas y grandes empresas, con 1 y 0,3 por ciento, respectivamente.

Dentro de este panorama, Liliana Montaño destacó que “el talento de la gastronomía colombiana reside en su capacidad de operación, y Acodrés está comprometida con elevar el estándar del servicio y la calidad”. Para la dirigente, el éxito se basa en la ecuación equitativa, del 33 por ciento, entre tres factores clave: producto, servicio e imagen.

“El servicio es clave y con variaciones, según la categoría, desde mostradores de comida rápida, la presencia de meseros en establecimientos, que denominamos casuales y un protocolo especializado en el segmento de fine dining. Esta visión integral —explicó Montaño— busca garantizar que los negocios no solo ofrezcan buenos productos, sino experiencias memorables”.

En esa línea y dentro del liderazgo que ejerce en el sector, Acodrés promueve el acceso a una proveeduría de primera calidad para los pequeños empresarios, ofreciendo calidad, facilidades y mejores precios a través de una economía de escala, puntualizó la dirigente

Una estructura renovada para el fortalecimiento del gremio

Con casi 70 años de historia, Acodrés se ha reestructurado para enfrentar los retos presentes del sector, trabajando desde una sede propia en Bogotá y habiendo iniciado un proceso de independencia financiera. El capítulo Bogotá Región representa actualmente a 120 empresas, que agrupan a 874 establecimientos de comercio y está enfocada en ser la representante del sector ante los organismos de gobierno a nivel distrital y nacional, implementando, además, la figura de socios adherentes, aprovechando su aporte de experiencia, conocimiento y tecnología para fortalecer a todo el ecosistema de la gastronomía.
